My Favorite Quick & Healthy Recipe

What’s your favorite quick, easy, and healthy recipe?

  • Oh, that's easy! Noodles and Cottage Cheese. That's it except for some salt and some butter. All you do is boil the noodles, while they're draining, you melt the butter than add in the cottage cheese, cook that up a little bit but not to long or else the cottage cheese becomes soup, than add in the noodles into the same bowl (to save on dishes because I hate washing), than that's it. If you feel like getting fancy add in meat (chicken or some left over whatevers) or some cooked spinach. Makes for quick and easy and somewhat nutritious thing. Good for college students on tight budgets.

  • I make a low-fat version of Italian sausage. One of the local grocery stores has a friendly butcher who sells me packages of commercial sausage seasoning. The Italian sausage variety is supposed to make 50 pounds of Italian sausage, but I found that if I took a heaping teaspoonful of the seasoning and added it to a couple pounds of the leanest ground beef and then added a teaspoonful of "Italian herbs" from the same grocery's bulk spices rack, that I'd have the closest thing possible to the Italian sausage that the pizza restaurants put on their pizzas. Once I have the ground beef mixed with the spices, I can either form it into patties or I can crumble it up to fry it in a skillet. If you keep canned pizza dough, pizza sauce, and cheese in your refrigerator and all the veggies that go on pizza, you can be sitting down to a decent home-made pizza in about 30 minutes if you get your tailfeathers moving. Low-fat, lots of veggies, calcium-bearing cheese...what's not to love about home-made pizza? ------------------------------- Edit: I just discovered that Mark Bittman, author of the cookbook "How to cook everything" has a series of video's on youtube. Quick good food is one of his specialties. Check his cookbook out at your local library or buy it when one of the bookstores has a 40% coupon. The book is huge and has a pricetag to match. Bittman tends to give you the methods of how to make a certain dish and then he discusses all the frills, bells, and whistles you can add to make the dish to your own taste. I like learning the methods, myself.

We just tried this one to get rid of our yellow squash and it was delicious! Slice a yellow squash and an onion up, spread out on a baking sheet, spray with a bit of olive oil, salt & pepper to taste. Then bake in the oven for 30 minutes at 325 degrees, turning everything over once halfway through cooking. That is so easy, and yet you get the yummy flavor of grilled squash.
  • I guess mine isn't really a recipe.  I love  cutting up vegetables and fruits and making salads.  I didn't matter what, it changes all the time. But it is healthy for you,  and sometimes I had rice.
