Yesterday I baked banana nut bread. However, one of the loaves got left in the oven too long and it turned out slightly burnt. Any suggestions for ways to recycle it, or should I just toss it?

firm pudding
I'm making my S'more Pie again today and want to try something to make the pudding consistency a little more firm. When I first posted about it, a few people had some suggestions for how to firm it up, but I'm not sure I'll be able to find that post. So...does anybody have any suggestions for how to firm up pudding so it's not quite so gooey? I don't want it to be too cakey though either. Thanks for any help!

Limes & Peanut Coleslaw
IMG_0749

I made this for a family lunch today; the flavours are amazing! This is great served along side meat or fish. I had some of the slaw in a rye lavash wrap with some hummus for a vegetarian alternative.

Recipe from 101cookbooks.com

I modified it by including grated carrot and white onion.

Help this recipe!
Hey All,

My husband and I have made this recipe a couple of times and we keep modifying it, but it still seems like it's missing something.  The original recipe came out of a Betty Crocker book and had asparagus and squash instead of broccoli...we're not fans of either of the other vegetables.  Here it is after our modifications:

8 ounces rotini pasta
4 garlic cloves, minced
1 medium onion, sliced
1 TB olive oil
2 heads (approx. 1 pound) broccoli
1/2 tsp salt
1/4 tsp pepper
1 cup whipping cream
1-2 roma tomatoes, sliced (hubby doesn't like tomatoes, so I only add them to my own)

Cook the pasta as directed.  Meanwhile, cook garlic and onions in hot oil until tender.  Add broccoli, salt, and pepper, and cook approx. 5 minutes until tender.  Remove vegetables to a bowl and keep warm.  Add whipping cream and heat to boiling.  Boil gently until reduced to 3/4 cup.  Combine all ingredients, heat through, and serve.

What would you add to make this more interesting?  It's good...it just seems like it's missing something.

Thanks!

15-minute mushroom burgers.

I whipped this up for dinner tonight, and I thought I'd share because it came out quite tasty-- it's only a shame I couldn't take a picture of the finished product before everyone devoured it. Since I eye everything according to how many I'm cooking for, I won't include measurements, but this is still fairly easy.

Ingredients:
-ground beef
-shallots
-garlic
-fresh thyme
(in this case, for three generous sized patties, I used one shallot, two large cloves of garlic, and three sprigs of thyme)
-mushrooms
-salt
-black pepper
-red pepper flakes
-butter
-choice of cheese (I used cheddar :)

1) Dice the shallots into tiny pieces, mince the garlic and thyme, slice the mushrooms and set these aside.
2) Combine the ground beef, shallots, garlic, thyme, and add salt, pepper, and red pepper flakes to taste. Shape into patties.
3) Since I didn't want to bother with a grill, I simply cooked the patties on a skillet over high heat and with a little butter.
4) In another skillet, sautee the mushrooms with butter.
5) Toast the burger buns if so desired, assemble with patty, cheese, and mushrooms, and voila!

It was very good. The fresh thyme added great flavor, the red pepper gave it a nice kick, and the addition of mushrooms made it that much more filling. The best part is that it only took 15-20 minutes to prep, cook, and assemble. (And not much longer to gulf down. ;)

Panini Press!
I just got a shiny new Panini press!

My first panino was a bit...shall we say...decadent. I don't have a food brush so I kind of overdid it with the olive oil since the bread absorbed it before I could spread it around. Should I get a basting brush? I was thinking of just getting a spray bottle and putting my olive oil in there? I want to oil the bread for sure but would also like to live beyond the age of 40.

Also, what are some good non-obvious panini recipes? I already have plans for eggplant, all varieties of cheese, basil, tomato, mushroom, salad greens and that sort.

Life drawing classes in Houston?
Does anyone know of any life drawing classes in Houston?

I'm currently going to the labs held at the Art League, but I'm wanting to take more classes this fall and have no clue where to look.

Thanks :)
