Hey All,
My husband and I have made this recipe a couple of times and we keep modifying it, but it still seems like it's missing something. The original recipe came out of a Betty Crocker book and had asparagus and squash instead of broccoli...we're not fans of either of the other vegetables. Here it is after our modifications:
8 ounces rotini pasta 4 garlic cloves, minced 1 medium onion, sliced 1 TB olive oil 2 heads (approx. 1 pound) broccoli 1/2 tsp salt 1/4 tsp pepper 1 cup whipping cream 1-2 roma tomatoes, sliced (hubby doesn't like tomatoes, so I only add them to my own)
Cook the pasta as directed. Meanwhile, cook garlic and onions in hot oil until tender. Add broccoli, salt, and pepper, and cook approx. 5 minutes until tender. Remove vegetables to a bowl and keep warm. Add whipping cream and heat to boiling. Boil gently until reduced to 3/4 cup. Combine all ingredients, heat through, and serve.
What would you add to make this more interesting? It's good...it just seems like it's missing something.

I whipped this up for dinner tonight, and I thought I'd share because it came out quite tasty-- it's only a shame I couldn't take a picture of the finished product before everyone devoured it. Since I eye everything according to how many I'm cooking for, I won't include measurements, but this is still fairly easy.
Ingredients: -ground beef -shallots -garlic -fresh thyme (in this case, for three generous sized patties, I used one shallot, two large cloves of garlic, and three sprigs of thyme) -mushrooms -salt -black pepper -red pepper flakes -butter -choice of cheese (I used cheddar :)
1) Dice the shallots into tiny pieces, mince the garlic and thyme, slice the mushrooms and set these aside. 2) Combine the ground beef, shallots, garlic, thyme, and add salt, pepper, and red pepper flakes to taste. Shape into patties. 3) Since I didn't want to bother with a grill, I simply cooked the patties on a skillet over high heat and with a little butter. 4) In another skillet, sautee the mushrooms with butter. 5) Toast the burger buns if so desired, assemble with patty, cheese, and mushrooms, and voila!
It was very good. The fresh thyme added great flavor, the red pepper gave it a nice kick, and the addition of mushrooms made it that much more filling. The best part is that it only took 15-20 minutes to prep, cook, and assemble. (And not much longer to gulf down. ;)
